A few good tips.

Which milk?

Whole milk gives the fullest body. Oat is creamy and neutral. Almond brings a lighter, nuttier edge.

Each one changes the cup a little. That's part of it.

Sweetness

White sugar keeps it clean. Brown sugar adds depth. Honey and maple soften the edges.

Start small. Sweetness is to taste, never to a rule.

Too strong or too weak

Too strong? Add a splash more milk. Too weak? Give it another minute on the stove.

Adjust as you go. The next cup will be closer to yours.

Questions.

Can I make it without dairy?

Yes. Oat, almond, soy and coconut all work. Oat tends to be the closest to whole milk.

Can I brew a larger batch?

Keep the ratio, scale up. Just leave room in the pan — it rises as it brews.

Can I drink it without sugar?

Of course. The spices and tea carry plenty on their own.
